Yum, Yum, Yum in my Tum, Tum, Tum!!!

Simple treat for a Friday night evening in with Mr. Potts was in order this past weekend.

We were both tired, we were hungry & wanted easy.

I pulled out a pound of lean ground turkey, threw some spices in, Mr. Potts threw them on the grill and we feasted!

We loved it & Mr. Potts actually said they were so good that he'd take these over regular burgers - except when he's hung over & craving grease. Cause you know, a greasy bacon cheeseburger makes all hangovers better. Especially if you could throw some peanut butter on there!!

Thought I'd share the recipe since it really was so easy & we loved it.

Mrs. Potts' Easy Peasy Turkey Burgers...YUM

Ingredients

  • 1 pound lean ground turkey breast
  • 2 teaspoons garlic powder
  • 2 teaspoons Cajun seasoning
  • 1/4 teaspoon black pepper
  • Red Pepper Flakes to your liking (we like it a little spicy)
Directions
  • Combine all ingredients and mix well. Pat out 4-5 patties, depending on how big you like them. Mine tend to be puffy & then I flatten them on the grill.
  • Coat Grill with Cooking spray.
  • Place on grill and let them sit for a minute.
  • Using a spatula, press down so that the patties are more evenly spread (i.e. not so big and puffy).
  • Cook for5 minutes over medium to medium high heat on both sides.
We served these with whole grain breads, spicy mustard, ketchup, slice of turkey bacon, lettuce, tomato & a little Miracle Whip. It was perfect!

Monday, Monday

I am singing U2's Bloody Sunday in my head right now, only the lyrics truly are, "Monday, Bloody Monday." I sing this in my head in exasperation with people I work with who wait until the last minute to complete things & then expect me to sweep in with my sparkly pink tutu on, shake my wand over their head, sprinkle a little fairy dust on their computers & *poof* make everything better. Like magic.

I wish. Or maybe I TRULY wish that people would *poof* disappear. Like magic.

So - enough with my little rant.

We had a wonderful weekend. The party was a HUGE success. We had tons of people, loads of yummy food, a bartender pouring yummy drinks (very cleverly named, too) and a good time had by all.

I'd share pictures with you, but I didn't take any (I know - I was the hostess with the mostest & was taking care of my guests). I'll have to snag some from friends. Promise!

Yummy tummy - Tuesday's dinner

Over the past few months, I've been trying to introduce Mr. Potts to new foods (he's a terribly picky eater - or he used to be) while still staying health conscious. Last night I succeeded.

I love calzones, but dislike the fact that I can't control the calorie/fat/sodium content. When I saw a recipe in my Cooking Light Magazine, I had to try it out. I substituted chicken for spicy Italian turkey sausage only because I use that in the stuffed peppers I make (Thursday's dinner) & I didn't want to overkill on sausage. Well, and the fact that Harris Teeter had boneless, skinless chicken breasts on sale - buy one get one free!

This turned out wonderfully & Mr. Potts has already requested that I make these again. Next time I will use the spicy Italian turkey sausage.

The yumminess that was

One that was cut in to and ready to be taken to work for lunch today.
The recipe is fairly easy.

Chicken, Pepper & Onion Calzone

Ingredients

  • 1 can Pillsbury pizza dough – I used the thin crust version
  • 1 Vidalia or other sweet onion, diced
  • 1 red bell pepper, thinly sliced and then halved
  • 1 yellow bell pepper, thinly sliced and then halved
  • Cooking spray
  • 1 pound chicken - diced
  • 1 ¾ cup pasta sauce – I used a Vodka sauce for a little more flavor
  • 1 1/3 cup (about 5 ounces) shredded part-skim mozzarella cheese


Preparation

1. Preheat oven to 500°


2. Lightly spray non-stick pan with cooking spray and cook chicken until no longer pink.


3. Coat onion and bell pepper pieces with cooking spray. Add vegetables to the pan with chicken. Grill vegetables 4 minutes on each side or until browned. Remove vegetables and chicken from pan; cool slightly.


4. Place dough on a lightly floured surface; divide dough into 4 equal portions. Roll each portion into a 9 x 5-inch rectangle. Spread 1/4 cup pasta sauce evenly over each rectangle, leaving a 1/4-inch border. Arrange chicken/veggie mixture evenly over half of the dough. Sprinkle each calzone with 1/3 cup cheese. Fold other half of dough over filling; press edges together with a fork to seal.


5. Place calzones on a baking sheet coated with cooking spray. Coat calzones with cooking spray. Bake at 500° for 15 minutes or until golden brown. Remove from oven; let stand 5 minutes. Cut each calzone in half; serve with remaining pasta sauce.


My note - keep an eye on your oven. I believe since I used the pre-made dough (the original recipe called for homemade) it cooked a little quicker. Mine were done in about 12 minutes.
