With traveling the past two weeks and the winter weather we had this past weekend, I may or may not have been in hibernation mode. I love snuggling by a fire & drinking hot chocolate. Or, walking to our favorite pizza place & drinking beer & eating wings & pizza. May or may not have done both this weekend.

With cold weather comes hearty food - the kind that fills you & makes you feel all cozy. Wanting a little of that goodness I decided to make a chicken stew yesterday to enjoy last night. This could probably be compared to a Brunswick Stew.
I got up in the morning & combined everything into my crockpot to let it cook for the day. This turned out great & was probably one of the easiest YUM meals I've made in a while. I knew I'd want to share this with you since it was so simple, yet hearty.

Mrs. Potts' Chicken Stew
Ingredients
- 4 Boneless/Skinless Chicken Breasts, boiled & shredded
- 1/2 cup ketchup
- 1/2 cup bbq sauce
- 2 Baking Potatoes cut into 1 inch pieces
- 2 cans diced tomatoes (I used fire roasted with garlic)
- 2 cans tomato sauce
- 1 bag frozen baby lima beans
- 1 bag frozen corn (I used Southwestern with peppers)
- 2 jalapeno peppers diced
Directions
- Combine all ingredients into a large crock-pot.
- Set crock-pot to low.
- Walk away for 6-8 hours.
- Stir occasionally.
- Serve into large bowls.

Oh that sounds so good! Maybe I will try making it this weekend. I love soups in the winter! My mother used to make them all the time (she still does!), but I rarely make them, I don't know why.

Yum so good. This semester, I teach late in the day so I'm stocking up on good crock pot recipes so I don't have to worry about cooking when I get home.
I was just thinking I have not heard from you in awhile. I need to pull out my crock pot!
Hibernation is allowed. Think we all have hibernation fever. I need spring, bad...blooms, beaches, flip flops, pedicures.......come on spring...

I hear ya on the hibernation deal. I've been struggling a ton to blog recently because I'd much rather be snuggled up watching a good movie or reading a good book.
